Seriously though, what you are basically proposing is a Pi with a display, which is not exactly new.
I'd recommend a Pi 5, because it's the latest, but frankly any Pi will do. And they're cheap enough that you can afford to take a gamble on your project working.
You could ask questions, as you have done, about whether something will work. Or you could acquire the gear and ask questions about doing the specific thing you want to do.
