Pi5 starts throttling at 85°C.
Everything below is fine.
Maximal temperature over 20min wih officail active cooler and 3GHz overclocked with fft stress-ng was 82.05°C, without overclocking around 72°C. Both are fine.
If you really want to to stress your Pi5, you need to run "stress-ng --cpu 0 --cpu-method fft".
