I agree, extremely niche, not likely for the normal Pi boards. The standard way to implement it would be SFP, which would take up too much space on the board, and the price of such a board with a SFP module would be at a totally different level to the current Pi boards with integrated 1000BASE-T. It's just not needed for the core market for the standard Pi boards.
In addition to the CM4/5, someone could produce a HAT+ for the Pi5 with either SFP or a different type of integrated gigabit interface (e.g. 1000BASE-T1). That's the practical way to do it, either for a highly specialised small run or someone wanting to produce a Pi-powered product with alternate network interface(s).
