I'm doing pretty much the same hardware setup, with an Adafruit PowerBoost 1000C and 2,000 to 4,000 mAh lipo battery, powering a Raspberry Pi 3 Model B through GPIO pins, with the official Touch Display (original). I just built it recently, haven't really used it yet. I'm about to swap in an RPi 4 Model B (8 GB) and Touch Display 2, and see how much runtime I get. I would get a 5 but I do believe (as noted above) 4 strains the PowerBoost 1000C limits, and 5 seems to break them.
