I don't know of a compatibility list and it probably isn't possible to construct one, as the market changes too rapidly and you can't rely on a given "device" to have the same internals over time (this has been a big problem with USB to SATA adapters over the years).Has anyone encountered a similar problem or knows a fix? Also, is there an official compatibility list of SSDs recommended for Raspberry Pi 5? Any help would be appreciated!
The only ones that are--effectively--guaranteed to work are the RPL branded ones. Fortunately for you, one of those is a 256GB model.
